Easy Spaghetti Carbonara
A luscious and wonderfully indulgent pasta dish!
What you need:
250g spaghetti or linguine
4 spring onions finely sliced
150g mushrooms sliced
Olive oil
Garlic clove
200g low fat soft cheese
1 large egg
150ml skimmed milk
15g parmesan cheese, finely grated
100g lean roast ham
Black pepper
Flat leaf parsley
What you need to do:
1. Put spaghetti into a saucepan with plenty of boiling water.
Cook according to instructions.
2. Heat frying pan and add olive oil and saute mushrooms and
spring onions with peeled halved garlic clove for 5 minutes.
3. Discard the garlic
and set aside mushrooms and onions.
Beat together the soft cheese and egg and add the skimmed
milk and half of the cheese.
4. Keep 2 tablespoons of pasta cooking liquid and drain the
pasta. Add to the pasta the cheese and egg mixture and the spring onions and
mushrooms, snip in the ham and stir all together.
5. Heat gently for 3 minutes to
cook the egg mixture until it has thickened.
6. Serve sprinkled with remaining parmesan cheese and basil
leaves to garnish if desired.
Mature cheddar cheese can be used instead of parmesan.
