Chocolate Cheesecake

A delicious chocolate cheesecake to delight the chocoholics in the family!

What you will need:

175g digestive biscuits or Hob Nobs,
50g butter
100g caster sugar
200g cream cheese
120ml whipping cream
3 tbsp cocoa powder
150g dark chocolate

What you need to do:

1. Crush the biscuits by placing into a plastic carrier bag and hitting firmly with a rolling pin. The biscuits must be crushed into fine crumbs.

2. Melt the butter in the microwave or a saucepan and place the biscuits into a bowl and mix with the butter.

3. Grease an 8 inch sandwich tin and then place the crumb mixture in the tin. Flatten to make an even base.

4. In a new bowl whip the whipping cream until thick. Add in the cream cheese and sugar.

5. Melt the chocolate by bringing a saucepan of water to the boil and place the chocolate in a bowl floating within it. Stir until nearly melted. Be careful not to leave melting too long as the chocolate will become thick and unusable.

6. Add the chocolate to the cream and stir until fully mixed.

7. Add the mixture to the sandwich tin evenly.

8. Place the cheesecake in the fridge and leave for an hour and half.

9. Remove from the fridge and enjoy!
