Chicken and Smoked Salmon Roulade with a cream sauce

A delicious evening meal!

What you need:

Chicken breasts
Smoked salmon
250ml of chicken or vegetable stock
White wine (optional)
Seasoning
Cream (optional)

What you need to do:

1. Flatten the chicken breasts.

2. Top with smoked salmon.

3. Roll up and secure with cocktail sticks.

4. Poach on simmer heat in stock with wine for 20 minutes until 70 degrees.

5. Remove from stock and and leave to rest for 10 minutes in a warm place.

6. Reduce stock and add a little cream if liked.

7. To serve: Cut into thick slices and serve with vegetables. Drizzle over some of the sauce.
